Also known as Lapis Legit, this rich butter cake, was originated in Indonesia during the Dutch colonial time. The Dutch call this spekkoek. It is also similar to another popular European cake – Baumkuchen.
Despite the name, the graceful horizontal striped look doesn’t actually have a thousand layer. Good Kueh Lapis, like ours, usually have 12 thin-layers or more that require really good technique to make. This gives the cake the proper thickness for a tantalizing balance of texture and visual, and the aromatic Indonesian spices gives the cake its rich and tender taste.
Slice it thin, and enjoy this cake anytime of the day, with coffee, tea, or your favorite dessert wine.
